What we do

Our team, at Nick Wallace Culinary (NWC), based out of Jackson, Mississippi, is all about place. The places where we cook,  where our ingredients come from, and the places where diners eat. NWC is led by Executive Chef Nick Wallace, whose own Mississippi roots and classical French training combine beautifully resulting in his unique Modern Mississippian cuisine.

The heart and spirit of NWC is deeply rooted in Mississippi, and we advocate for the distribution of home-grown and farm-raised products. We are a resource for local farmers, regional chefs, restaurateurs, and for individual families who are as passionate about cooking food that is close to home as we are.

Chef Nick Wallace uses local ingredients and fresh fruits and vegetables from local farmers to shape his signature dishes. Chef Nick believes in family, and draws his inspiration from where he heart is, home.

was born and raised in Edwards, Mississippi, and has always given credit for his cooking abilities to his grandmothers,Queen Morris and Lennel Donald. A leader in redefining the Southern food experience, Chef Nick blends his Mississippi family-farm origins with sophisticated French techniques to create exceptional dining experiences.

Chef Nick possesses the creativity, innovation, and drive to deliver exceptional cuisine of the highest quality. His culinary philosophy and passion reflects the growing trend towards a healthier lifestyle, and working with local farmers. Chef Nick uses the finest local and regional organic produce in his dishes.

With a desire to take on any challenge the culinary world has to offer, Chef Nick Wallace has participated in several culinary events.  In 2013 (September)  Chef Nick participated in the James Beard Foundation's third Chefs Boot Camp for Policy & Change at Glynwood in Cold Spring, New York. He has served as chef at The Beard House in New York City on two separate occasions, most recently hosting a sold-out “Southern Hospitality” dinner in December 2013. Wallace was also featured on the list of “Best Chefs America” in 2013 and 2017. and won Food Network Chopped: Alton Brown Challenge in October 2017. 

Chef Nick Wallace has many accomplishments under his culinary belt, and looks forward to many more opportunities that will challenge his culinary knowledge.

I have worked with Chef Nick throughout my time in Jackson, MS, working with different food, education, and health-related non-profit organizations. He is always a joy to work with and brings excellence to the table! This summer, Chef Nick catered a leadership training, hosted by the National Center for Appropriate Technology. We had a room full of about 36 food systems leaders from around the state (farmers, community advocates, food policy council members, etc.). Training participants raved that it was the "best conference food" they had ever had. We are especially grateful for how Chef Nick supports his local community and local farmers; we had some specific requests about how ingredients would be sourced for the meal, and he fulfilled the requests with enthusiasm and ease.

We had supper club at my house. Nick and Glen came in a took over with style! I didn’t have to worry about anything. Nick prepared the meal while Glen took care of all guests and table settings. The meal was fresh and fabulous. Shaved salad, brisket that melted in your mouth, salmon pasta to die for, fried rice that was delicious and fresh sautéed vegetables. Wow! What a great night. I would definitely recommend Nick for any dinner party!!

Hey, my name is Talya and I love food! Today I got the opportunity to try some great food prepared by Chef Nick. He and his staff (Glenn and Grace) were the caterers for an event that I hosted. The brunch consisted of eggs, sautéed vegetables, potatoes, fruit, turkey sausage, chicken and petit fours. When Nick and I met to discuss the menu he found out that I have a love for desserts. The petit fours were the star of the meal. The carrot cake and butter crunch were my favorites. The flavors married well in each of the items. Although my Ladybug enjoyed the fruit the most she noted that her chicken was delicious. Six year olds are hard to please. 🙄
The staff was beyond professional. He and I didn’t discuss decor; however, it all blended in. Five stars all around. Yes, I will use him again!
